what you need
- 1 can (28-35 oz.) diced tomatoes with garlic, basil, and olive oil
- 1 can (28-35 oz.) regular, unflavored diced tomatoes
- 2 cans (6 oz. each) roasted garlic tomato paste
- 1 or 2 cans (28 oz.) dark red kidney beans, drained
- 1 can (12 oz.) pinto beans
- 1 can (10 oz.) baked beans of choice
- 1 - 3 lbs. cooked ground beef
- 1 Tbsp. fresh chopped garlic
- 1/2 medium onion, diced
- OPTIONAL:
- 1 or 2 dashes of chili powder
- 1 or 2 cans of green chilies
- A few sprinkles of Louisiana style Cajun seasonings
- 1/8 to 1/4 tsp. ground red cayenne pepper
- 1/2 tsp. marjoram leaves
- 1/2 tsp. thyme leaf
- 1/2 tsp. crushed red pepper
- 1 Tbsp. Italian seasonings

In a large stockpot, empty all canned ingredients. Add all spices, and turn the burner on to a simmer, covered, and stirring occasionally.
While the base is simmering, brown the ground beef over a medium-high heat, add fresh chopped garlic and diced onion. Once the beef is fully cooked, drain if desired.
Take the lid off of the stockpot and put the ground beef in to the base. Stir chili well, replace lid and turn the heat up to a medium-low heat and simmer for another 15 minutes, stirring occasionally.
Notes
You don't have to use these spices but I have gotten rave reviews from family and friends every time I use them as well;
I find that this chili can be made to suit each person’s palette. If you have someone who loves to have their mouth throat and stomach on fire, find some Habanera flavored Tabasco sauce and let them put in their own bowl.
