No Fail Chicken & Rice Casserole

what you need
  • 2 cups cooked chicken (cubed or shredded)
  • 2 cups cooked rice
  • 1 can (10 oz.) cream of chicken soup
  • 1/3 cup mayo or sour cream
  • 1/2 cup milk
  • 1 small onion, chopped
  • 1 cup frozen peas
  • 1 tomato, chopped
  • 2 cups shredded cheddar cheese, divided
  • Salt and pepper to taste
make it
1. Cook chicken any way you want or use leftovers. Cook rice any way you like or use leftovers. Instant or Minute Rice is great.

2. Combine soup, mayo/sour cream, milk, onion, peas and tomato in a medium sized bowl. Fold in the chicken, rice and 1 cup of the cheese. Salt and pepper to taste.

3. Pour into a medium sized baking dish and top with the last cup of cheese.

4. Bake 25-30 minutes on 350°F uncovered.
I make this dish low fat. I use fat free soup and milk as well as reduced fat cheese and sour cream. I also use Brown Minute Rice. It tastes awesome either way.

I also play around with the frozen veggies. I still like the peas best.
