Makes: 2 medium-sized balls Total Time: 1 hr
Category: Appetizers Sub Category: Spreads & Cheese Balls

what you need
  • 1/2 to 1 pound bacon, fried and crumbled
  • 1 roka blue cheese spread
  • 1 old English cheese spread
  • 2 small cream cheese, softened
  • 1 bunch green onion
  • 2 Tbsp. bacon grease drippings
make it
Cook bacon until crispy. Drain and set grease aside. Crumble bacon and set aside.

Cream together all ingredients except bacon until well blended. The mixture will be sticky.

I put the bowl in the refrigerator for about 20 minutes or until it's easier to work with. Form into 2 balls and roll into crumbled bacon.
You can wrap these in wax paper and freeze one or both of them to save for another time. If I wrap and freeze them I don't put the bacon on to keep it crispy, but you can definately put the bacon on ahead of time.
