Zucchini Bread

what you need
  • 2 cups zucchini, shredded
  • 1 cup canola oil
  • 2 cups sugar
  • 2 tsp. vanilla
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 eggs
  • 3 cups flour
  • 1 cup pecan pieces (optional)

Preheat oven to 350 degrees. In a large bowl, mix zucchini, oil, and sugar. Blend well with wire whisk or electric mixer. Add vanilla, baking powder, cinnamon, salt, baking soda, and eggs. Blend well. Mix in flour slowly.

Spray 2 loaf pans with cooking spray and dust with sugar. Pour mixture equally into the loaf pans.

Bake 55-60 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes in pan. Remove from pan to wire rack. Cool completely. Cut loaf into slices and serve.
Mixing the zucchini, sugar, and oil first brings the flaver of the zucchinni out more.

Mixing the flour last ensures that all other ingredients gets mixed in well.

Mixing in the flour slowly makes sure that it gets mixed well.
