Strawberry Banana "Toaster" Pancakes

what you need
  • 1 cup milk
  • 1 egg
  • 1 1/4 cup Aunt Jemima Original Pancake Mix
  • 1 banana
  • 5 medium strawberries
make it
Preheat skillet over medium-high heat or electric griddle to 375F. Lightly grease skillet or griddle.

Mix the pancake batter as per instructions. Mash up banana and strawberries (or use a food processor). Mix everything together (I use my electric mixer to get all the lumps out).

Pour slightly less than 1/4 cup batter for each pancake. Turn when pancakes bubble and bottoms are golden brown. Continue to cook for approx. 1 minute.
Notes
I make the pancakes toaster size so I can freeze them and later pull them out and pop them in the toaster for a quick delicious breakfast on the go. I wrap them up in waxpaper to keep them seperate and put them in a freezer Ziploc bag. I only have two little children so a whole batch is just a waist... now I know what to do with the leftovers (c;
