Blueberry Buckle Coffeecake

what you need
- 4 cups all purpose flour
- 1 1/2 cups sugar
- 5 tablespoons baking powder
- 1 1/2 teaspoons salt
- 1/2 cup shortening
- 1 1/2 cups milk
- 2 eggs
- 4 cups canned blueberries, drained
- Topping for cake:
- 2 cups sugar
- 2/3 cup flour
- 1 teaspoon cinnamon
- 1/2 cup Parkay margarine

Preheat oven to 350. Blend first seven ingredients. Beat vigorously for 30 seconds. Gently stir in blueberries. Spread 1/2 cup of batter into a 9x13 inch glass baking dish sprayed with non-stick cooking spray.
Mix topping ingredients and sprinkle 1/2 of topping over batter. Add remaining batter, and then sprinkle with remainder of topping.
Bake for 45 to 50 minutes.
Notes
To make this a dessert, top with a scoop of vanilla ice cream or a dollop of Cool Whip.
