Orange French Toast

what you need
  • 6 eggs
  • 1 cup orange juice
  • 2 tablespoons grated orange rind
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 6 slices (1-inch thick) French bread
  • Orange Marmalade Sauce:
  • 1/2 cup orange marmalade
  • 1/4 cup orange juice
  • 2 tablespoons honey

1. In mixing bowl, beat together eggs, orange juice and rind, sugar, and vanilla.

2. Arrange bread, cutting to fit, in single layer in greased 13 x 9-inch baking dish. Pour orange mixture over top; cover and refrigerate overnight.

3. Preheat oven to 350 degrees. Bake, uncovered, for 25 to 30 minutes or until no longer soggy and firm to touch.

4. Orange Marmalade Sauce: Meanwhile, in saucepan, bring marmalade, orange juice, and honey to boil; reduce heat and simmer, stirring, about 5 minutes or until slightly thickened. Serve with French toast.
