Corn Bread Salad

what you need
  • 1 box Jiffy Corn Muffin Mix
  • 2 tomatoes, chopped
  • 3-4 green onions, chopped
  • 1/4 to 1/3 cup sweet pickles, chopped
  • 1 bell pepper, chopped
  • 1 cup mayonnaise
  • 1/4 cup pickle juice
make it
Bake cornbread as directed on box. Cool and crumble cornbread in a bowl.

Add chopped tomatoes, onions, pickles & bell pepper.

Mix the mayonnaise & pickle juice together until smooth. Pour over other ingredients & mix well.
If you want to serve this on a bed of lettuce - it has a tendency to get watery - so wait until serving time to put on lettuce.
