what you need
- 1 box (12 oz.) bow tie (Farfalle) pasta
- 4 oz. (1/2 block) cream cheese
- 3 Tbsp. milk
- 2 cloves crushed garlic
- 1 cup pesto
- 1/4 tsp. sea salt or table salt
- 1 Tbsp. butter
- 1 tsp. balsamic vinaigrette dressing (optional)
- 1/2 medium onion, sliced
- 3-4 fresh mushrooms, sliced
- 1/2 large tomato, diced
make it
In large pan, set water to boil for pasta. Add pasta when water is at a rolling boil and cook until tender.
In a medium pan, add cream cheese, milk, garlic, pesto, & salt. Heat on medium-low, stirring often, until mixture is combined. Reduce heat to low or warm (depending on stove) and continue to stir often.
Add butter, balsamic vinaigrette, and onions to small fry pan. Sauté on medium-high until golden brown, stirring often to prevent burning. Add mushrooms and cook until onions are turning brown. Add tomatoes and heat until tomatoes are warm, stirring constantly.
Add vegetable mixture to sauce and stir well. Drain pasta and return pasta to pan. Add sauce & vegetable mixture to pan with pasta and stir to coat all pasta.
Notes
Serve with a side salad and/or garlic bread. If sauce is too thick, add extra milk. More or less garlic and salt can be used to taste.
