Oatmeal-Walnut Scones

what you need
  • 1 cup all purpose flour
  • 2/3 cup whole wheat flour
  • 1/3 cup sugar
  • 3/4 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chilled butter or margarine cut into small pieces
  • 1 1/4 cup quick cooking oats
  • 3/4 cup finely chopped walnuts, toasted
  • 3/4 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1 egg, lightly beaten
make it
Preheat oven to 350°F. Combine flours, sugar, baking soda, baking powder and salt in a large bowl. Cut in butter until mixture resembles fine meal. Stir in oats and walnuts. Add buttermilk and vanilla. Stir just until blended.

On lightly floured surface pat dough to 1/2 inch thickness. Use a 3 inch cookie cutter dipped in flour to cut out scones. Place 1 inch apart on baking sheet. Brush tops of scones with beaten egg.

Bake 18 to 20 minutes or until scones are lightly brown.
