what you need
- 2/3 cup shortening
- 2 2/3 cups sugar
- 4 eggs
- 3 cups shredded zucchini
- 2/3 cup water
- 3 1/3 cups flour
- 2 tsp. baking soda
- 1 1/2 tsp salt
- 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. ground cloves
- 2 tsp. vanilla
make it
1. Preheat oven to 350. Grease bottoms only of 2 loaf pans, 9x5x3 inches, or 3 loaf pans, 8x4x2.
2. Mix shortening and sugar in large bowl.
3. Add eggs, zucchini and water.
4. Blend in flour, baking soda, salt, baking powder, cinnamon, cloves and vanilla. Add flour about 1 cup at a time and mix in before adding another cup.
5. Pour into pans.
6. Bake until wooden pick comes out clean – about 1 hour 10 minutes. Cool slightly.
7. Loosen sides of loaves from pans and remove from pans. To store, wrap and refrigerate.
