what you need
- 1 Tbsp. olive oil
- 1 small onion, finely diced
- 1 pack frozen spinach, drained and chopped
- 1 refrigerated pie crust
- 1 cup shredded Swiss cheese
- 1 cup shredded Monterey Jack cheese
- 3/4 cup milk
- 1/2 cup sour cream
- 2 eggs, slightly beaten
- Pinch salt
- Pinch pepper
- 1/2 cup cooked bacon, optional
make it
Heat olive oil, cook onion and chopped drained spinach. Put in unbaked pie crust. Add cheeses.
Mix milk, sour cream, eggs, salt and pepper and bacon together. Pour into pie shell.
Cover evenly and bake at 350 for 45 minutes to 1 hour, depending on your oven.
