what you need
- 12 cups freshly popped popcorn (2 cups unpopped) or 2 bags microwave popcorn
- 2 cups whole roasted, salted pecans
- 1 cup crystallized ginger, chopped
- 2 cups packed brown sugar
- 1/2 cup dark corn syrup
- 1/2 lb. butter (2 sticks)
- 1 tsp. vanilla powder (optional)
- 1 pkg. (14 oz.) M&M's
make it
1. Preheat oven to 250°F. Line a baking pan with wax paper & set aside. Place popcorn, pecans, & ginger in a large bowl & stir to mix. Set aside.
2. Place sugar, corn syrup, & butter in a medium saucepan. Over medium-high heat, bring to a boil, then let cook 5 minutes, stirring constantly. Remove from heat & stir in vanilla powder. Pour over popcorn mixture, stir to coat evenly.
3. Place mixture on wax paper lined baking sheet & bake for 10 minutes. Allow to cool for 10 minutes.
4. Pour M&M's over mixture on baking sheet, and then transfer to serving bowl.
