Fruited Cashew Chicken Salad

what you need
- 4 cups diced cooked chicken
- 2 cups seedless grapes (you can use red or green - I like red for color)
- 1 cup chopped celery
- 1/2 cup chopped green pepper
- 1 can (15 oz.) pineapple chunks, drained
- 1 can (11 oz.) mandarin oranges, drained
- 2 Tbsp. grated onion (optional)
- 1 cup Kraft Mayonnaise (yes, fat free works well!)
- 1 Tbsp. prepared mustard
- 1 tsp. lemon juice
- 1 cup cashews (more if you like them!)
- 1 can chow mein noodles
make it
- Combine top seven (7) ingredients into a bowl.
- Blend together mayonnaise, mustard and lemon juice.
- Toss gently the blended ingredients into the chicken mixture.
- Cover and chill for several hours.
- Before serving, mix in cashews and chow mein noodles.
