Fruited Cashew Chicken Salad

Makes: 6 servings, 2 1/2 cups Total Time: 1 hr

what you need
  • 4 cups diced cooked chicken
  • 2 cups seedless grapes (you can use red or green - I like red for color)
  • 1 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1 can (15 oz.) pineapple chunks, drained
  • 1 can (11 oz.) mandarin oranges, drained
  • 2 Tbsp. grated onion (optional)
  • 1 cup Kraft Mayonnaise (yes, fat free works well!)
  • 1 Tbsp. prepared mustard
  • 1 tsp. lemon juice
  • 1 cup cashews (more if you like them!)
  • 1 can chow mein noodles
make it
- Combine top seven (7) ingredients into a bowl.
- Blend together mayonnaise, mustard and lemon juice.
- Toss gently the blended ingredients into the chicken mixture.
- Cover and chill for several hours.
- Before serving, mix in cashews and chow mein noodles.
