Herb Potato Salad

what you need
  • 1 lb. new red potatoes
  • 1/2 cup sliced radishes (optional)
  • Dressing:
  • 3 Tbsp. plain, nonfat yogurt
  • 1 Tbsp. reduced calories mayonnaise
  • 1 - 1/2 tsp. Dijon mustard
  • 1/2 tsp. garlic
  • 1/2 tsp. dried basil
  • 1/4 tsp. dried thyme
  • 1/4 tsp. onion powder
  • 1/4 tsp. salt (optional)
make it
Scrub and cube potatoes. Place in medium saucepan and cover with water. Bring potatoes to a boil. Cover, reduce heat and simmer 12 minutes or until the potatoes are done. Drain water from the potatoes.

Mix dressing ingredients into a bowl.

Combine into dressing bowl, hot potatoes and radishes. Serve hot or cold.
