what you need
- Vegetable oil for frying
- 1-1/2 cups yellow cornmeal
- 1 cup self-rising flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon ground black pepper
- 1/2 cup finely chopped green onion
- 1/2 cup finely chopped celery
- 3/4 cup buttermilk
- 1 egg, lightly beaten
- 1/4 teaspoon hot sauce
- Creole seasoning to taste

Fill a Dutch oven or a deep fryer with vegetable oil to a 2-inch depth. Heat oil to 350°F.
In a medium bowl, mix cornmeal, flour, salt, sugar, and black pepper. Add green onion and celery, stirring to combine.
In a small bowl, mix together buttermilk, egg, and hot sauce. Combine buttermilk mixture with cornmeal mixture.
Drop batter by teaspoonfuls into hot oil. Fry for 5 to 6 minutes, turning several times, until golden brown. Drain on paper towels and sprinkle with Creole seasoning to taste.
