Extra-Creamy Cheese Grits

- 2 cups water
- 2 cups milk*
- 1 teaspoon salt
- 1 cup stone-ground white grits (not instant)
- 2 cups grated sharp white Cheddar cheese
- 1/8 teaspoon cayenne pepper

In a 4-quart saucepan with a lid, bring water, milk, and salt to a rolling boil over medium-high heat on stovetop.
Add grits, reduce heat, and stir until grits return to a simmer and starch begins to develop. Cover grits and reduce heat to low.
Cook for approximately 1 hour or until creamy. Check grits occasionally to make sure they don't scorch on the bottom, but don't stir too frequently. Add cheese and cayenne pepper. Taste grits and add additional salt, if desired.
Notes
*For an extra-rich result, substitute heavy whipping cream for milk in the recipe.
