what you need
- 2 tablespoons olive oil
- 1 small white onion, thinly sliced
- 1 red bell pepper, seeded and cut into strips
- 1 clove garlic, minced
- 1 medium yellow summer crookneck squash, cut into strips
- 1 medium zucchini, cut into strips
- 2 tablespoons finely shredded fresh basil
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh lemon juice
- 1 cup baby spinach leaves

In a large saute pan, heat oil over medium heat on stovetop. Add onion; cook for 2 to 3 minutes, or until tender. Add bell pepper and garlic; cook for 2 to 3 minutes.
Add squash, zucchini, basil, salt and pepper; cook for 5 to 6 minutes, or until squash is just tender. Add lemon juice and remove from heat.
To serve, lay a few leaves of spinach on a plate and spoon hot vegetables on top.
