what you need
- 6 zucchinis
- 8 oz. cream cheese
- 4 oz. grated mozzarella cheese
- 4 oz. grated cheddar cheese
- 1/4 red onion, diced
- 4 scallions, thinly sliced
- 2 garlic cloves, crushed
- 1 tsp. Italian spices
- More grated cheese for topping
make it
Cut zucchinis in half. Cut the round side 1/4 inch so it turns into a stable base. Scoop the center out with a spoon or a melon baller. Chop and save the insides of the zucchinis.
Mix all the ingredients together and fill the canoes. Sprinkle some more cheese on top.
Bake at 350° for 10 to 15 minutes or until golden brown.
