5 Bean Chicken Chili

what you need
  • 3 Tbsp. oil
  • 2 lb. chicken, diced or ground
  • 1 Tbsp. coriander, ground
  • 1 Tbsp. cumin, ground
  • 1 Tbsp. dark chili powder
  • 8 oz. onions, chopped
  • 2 Tbsp. garlic, minced
  • 8 oz. green peppers, chopped
  • 2.5 oz. chicken base
  • 6 lb. diced tomatoes in juice
  • 12 oz. tomato sauce
  • 3 cups water
  • 8 oz. garbanzo beans
  • 8 oz. kidney beans
  • 8 oz. black beans
  • 8 oz. pinto beans
  • 8 oz. navy beans
  • Cayenne pepper to taste
make it
In large stock pot, cook chicken in oil. Stir to break up clumps. Add spices and cook until chicken is almost cooked.

Add onions, garlic, peppers and chicken base. Simmer until onions are starting to turn transparent. Add tomatoes and tomato sauce. Mix well. Add water mix well and bring to boil. Reduce heat to a simmer and simmer 30 minutes.

Rinse beans and add beans to chili. Continue to simmer for 15 minutes. Taste and adjust seasonings.
