Carol's Corn Salad

what you need
  • 1 large can corn
  • 2 green peppers, diced
  • 2 red peppers, diced
  • 1/4-1/2 jalapeno pepper, diced small
  • 1/2 red onion, diced
  • Kraft Mayonnaise
  • Ketchup
make it
1.) Mix corn, peppers, and onions in a bowl large enough so it can be tossed easily.

2.) In a separate bowl, mix the mayonnaise and ketchup in almost equal portions until it's the color of Crayola pink carnation crayons or a soft pink (Russian dressing).

3.) Toss the dressing gently into the vegetables. Do not make it too "wet."

4.) Chill before serving.
Notes
The consistency of the salad is a matter of taste. Some like a more moist salad than others. One has to experiment with proportions. Generally, 1/4 - 1/2 cup of mayonnaise as a base is sufficient.
