what you need
- 1/2 cup butter
- 2 cups shredded sharp cheddar cheese (8 ounces)
- 1/4 teaspoon salt
- 1/8 to 1/4 teaspoon ground red pepper
- 1 cup all-purpose flour
- 3/4 cup chopped pecans, toasted
make it
1. Let butter and cheese stand at room temperature for 30 minutes.
2. In a medium mixing bowl beat butter, cheese, salt, and ground red pepper with an electric mixer on medium speed until fluffy. Beat in flour, a little at a time, until combined. Stir in pecans.
3. Divide dough into thirds. Shape each dough portion into a 1-inch-thick roll; wrap in waxed paper. Freeze for 1 hour or until firm enough to handle. Cut rolls into 1/4-inch slices. Place slices 1 inch apart on ungreased baking sheets.
4. Bake in a 350 degrees F oven for 10 to 12 minutes or until edges are firm and lightly browned. Transfer to wire racks to cool. Store in an airtight container up to 3 days or freeze up to 3 months.
