what you need
- 1 egg, slightly beaten
- 1/2 cup cooked rice
- 1/3 cup finely chopped onion (1 small)
- 1/4 cup fine dry bread crumbs
- 2 teaspoons brown sugar
- 2 teaspoons lemon juice, divided
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound lean ground beef
- 1 cup ketchup
- 1 cup grape jelly
- 1/4 cup raisins
make it
1. In a large bowl combine egg, cooked rice, onion, bread crumbs, brown sugar, 1 teaspoon of the lemon juice, garlic powder, salt, and pepper. Add ground beef; mix well. Shape into forty 1-inch meatballs. Arrange meatballs in a 15x10x1-inch baking pan. Bake in a 350 degree oven for 15 to 20 minutes or until done (160 degrees). Drain off fat. Transfer meatballs to a large serving bowl.
2. Meanwhile, for sauce, in a medium saucepan combine the remaining 1 teaspoon lemon juice, the ketchup, jelly, and raisins, bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally. Pour sauce over meatballs; toss gently to coat.
