Ham and Parmesan Mini Frittatas

what you need
  • 1 package thinly sliced deli ham
  • 12 eggs
  • 1 1/2 cups milk
  • 3/4 cup grated parmesan cheese
make it
Preheat oven to 350°F. Spray 2 (20-count) mini-muffin tins with nonstick cooking spray. Chop ham into very small pieces. Beat eggs and milk until mixed. Continuously beat eggs while adding in parmesan and ham.

Spoon mixture into mini-muffin tins, filling each cup 1-2 to 2-3 full.

Bake on 350 for 7-8 minutes, or until puffy and firm. Remove from oven and allow to cool slightly before removing from tins. Serve immediately or store in refrigerator to serve chilled.
Great for on-the-go breakfast, these Italian-style frittatas are delicious served hot or cold!
