what you need
- 1 lb. fresh green beans
- 2 shallots
- 3 teaspoons extra virgin olive oil
- Coarse salt, less than 1 teaspoon
- Pepper to taste
- 4 Tbsp. sun-dried tomatoes, patted dry (optional)

Preheat oven to 450 degrees. Line large cookie sheet with foil (for easy clean-up). Wash and trim beans - leave whole - then pat dry. Slice shallots in thin slices. Toss green beans with olive oil, salt and pepper.
Place on cookie sheet in thin layer. Cook for ten minutes. Remove from oven, add shallots and stir beans and shallots, redistributing in thin layer. Cook another ten minutes or until beans start to shrivel and turn brown in spots.
If using, add sun-dried tomatoes for the last 10 minutes.
