Incredible Triple Chocolate Cookies

what you need
  • 1 box (8 oz.) Baker's Semi-Sweet Chocolate Baking Squares, chopped
  • 4 tablespoons (1/2 stick) butter, softened
  • 2/3 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 6 oz. dark chocolate chips 60% cocoa
  • 1 box (6 oz.) Baker's White Chocolate Bar, chopped

Preheat oven to 350 degrees. Combine chopped semi-sweet chocolate and butter and melt in microwave at 20 second intervals, stirring between intervals - until just melted. Be careful not to over cook, set aside at room temperature.

In a small bowl, combine flour, baking powder and salt; stir well. Set aside.

In a medium bowl, combine eggs, brown sugar, and vanilla and beat until fluffy. On low speed, beat in melted chocolate. Add flour mixture, beat just until all ingredients are combined. Stir in dark and white chocolate. The batter will be thin and brownie like.

Drop by generous tablespoons on ungreased cookie sheets.

Bake 10 - 12 minutes. Tops will be shiny and begin to crack. Be careful not to overbake. Cool on pan for 10 minutes. Store in an airtight container.
