Eggplant Slices - Breaded

what you need
  • 1 medium eggplant
  • 1 bottle (8 oz.) fat free Italian salad dressing
  • 1/2 cup dry bread crumbs
make it
Cut eggplant into 1/2" slices. Dip eggplant into Italian salad dressing. Then coat with bread crumbs.

Arrange in a single layer on baking sheet coated with non stick cooking spray.

Bake at 450°F for 12 - 15 minutes or until golden brown, turning once.
