Pumpkin Pie - No Crust

what you need
  • 1 can (16 oz.) solid pack pumpkin
  • 1 can (13 oz.) evaporated skim milk
  • 2 egg whites
  • 1/2 cup biscuit mix (can use low fat)
  • 2 Tbsp. sugar
  • 8 packets sugar substitute
  • 2 tsp. pumpkin pie spice
  • 2 tsp. vanilla
make it
Preheat oven to 350 degrees F. Spray 9-inch pan with vegetable spray.

Combine all ingredients in mixing bowl and mix for one minute.

Bake for 50 minutes or until center puffs up.
