Everything but the Kitchen Sink Cookies

what you need
- 1 cup brown sugar, firmly packed
- 1/2 cup granulated sugar
- 1 cup trans fat free margarine (i.e. Smart Balance)
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup all-purpose flour
- 3/4 cup white whole wheat flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 2 1/4 cups quick oats
- 1/2 cup raisins
- 1/2 cup macadamia nuts, roasted and salted (other nuts can be substituted)
- 3/4 cup coconut flakes, firmly packed
- 1/2 cup butterscotch chips
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips

Preheat oven to 350 degrees F. Beat the margarine and sugars together until fluffy. Add eggs and vanilla and mix well. Combine both flours, baking soda and cinnamon. Add flour mixture to sugar mixture and beat well. Stir in oats, raisins, nuts, coconut, and all chips.
Drop by rounded teaspoonfuls onto an ungreased cookie sheet.
Bake 14-18 minutes, or until golden brown. Cool on wire rack.
Notes
This recipe can be changed to fit your taste. If you don't like macadamia nuts try peanuts or try substituting cherries for the raisins. Yummy!!
