what you need
  • 2 cans (15 oz. each) black beans, rinsed & drained
  • 2 cans (14.5 oz. each) Mexican-style stewed tomatoes, undrained
  • 1 can (15.25 oz.) whole kernel corn, rinsed & drained
  • 1 can (14 oz.) reduced sodium chicken broth
  • 2 cups chopped potatoes (2 medium)
  • 1 cup salsa
  • 1 cup frozen cut green beans
  • Sour cream (optional)
make it
In a 4-quart slow cooker, combine drained black beans, undrained tomatoes, corn, broth, potatoes, salsa and green beans.

Cover and cook on high-heat for 7-9 hours.

If desired, top with sour cream.
