Laurel's Stuffed Mushrooms

what you need
- 1 container (16 oz.) fresh mushrooms
- 3-4 strips bacon or veggie bacon
- 1 small bunch green onions or 1/4 of a small sweet onion
- 4-6 Ritz Crackers (can be substituted for other crackers or even croutons)
- 1 egg
- 1/4 cup shredded cheddar or Colby-Jack cheese
- 1-2 cloves garlic, pressed or minced
- 1/4 tsp. dill
make it
- Preheat oven to 350°F
- Wash mushrooms, then remove and finely chop stems
- Cook bacon and crumble
- Finely chop onions
- Crush crackers or croutons into small pieces
- Mix mushrooms stems, egg, crackers, cheese, garlic, onions, & dill together
- Fill mushrooms caps with stuffing mixture (extra stuffing can be baked in a small soufflé or brulée cup)
- Place mushrooms on a baking sheet and bake for 15 minutes or until stuffing browns
Notes
Sausage or veggie sausage can also be used in place of bacon or bacon/meat can be omitted entirely.
