what you need
- 8 oz. uncooked rotelle or spiral pasta
- 4 cups broccoli florets
- 1 pkg. pesto pasta sauce mix
- 1/3 cup olive oil
- 3 Tbsp. red wine vinegar
- 1 cup cherry or grape tomatoes, halved
- 1 cup sliced mozzarella cheese (about 4 oz.)
- Salt and pepper (to taste)
make it
Cook pasta according to package directions, adding broccoli during last 5 minutes of cooking. Drain; rinse with cold water until cool.
In bowl, combine sauce mix, oil and vinegar. Add pasta with broccoli, tomatoes, cheese, and salt and pepper to taste; toss.
Serve immediately or chill.
Notes
Try adding 1-1/2 cups diced, cooked chicken OR 6 oz. cooked shrimp OR 1 cup diced, cooked ham.
