what you need
- 2 Tbsp. better or vegetable spread
- 4 cups sliced fresh or frozen vegetables (green peas, mushrooms, red bell pepper, zucchini, onion)
- 2 cloves garlic, finely chopped
- 1-1/3 cups milk
- 1 pkg. Alfredo pasta sauce mix
- 8 oz. penne pasta or fettuccine, cooked and drained
- Parmesan cheese (if desired)

In 12-inch skillet, melt butter or spread over medium-high heat and cook vegetables and garlic, stirring frequently, until vegetables are crisp-tender.
Stir in milk and sauce mix. Bring to a boil, stirring constantly. Reduce heat and simmer, stirring constantly, 1 minute.
Toss sauce with hot penne and sprinkle, if desired, with grated parmesan cheese.
