what you need
- 1 lb lean ground beef or 1 pkg. firm tofu, drained and crumbled
- 1/2 medium onion, chopped
- 1 clove garlic, minced
- 1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed dry
- 1/2 tsp. Italisn herb seasoning
- 1 cup (4 oz.) shredded Monterey Jack cheese
- 1 pkg. egg roll wrappers
- SAUCE:
- 1 can (15 oz.) tomato sauce
- 1/2 cup dry red or white wine
- 1/2 tsp Italisn herb seasoning

Crumble meat or tofu into wide skillet; add onion and garlic. Cook over medium heat until meat or tofu is medium browned (4-5 min). Discard excess oil or water. Add spinach and Italian herb seasoning; mix well. Let mixture cool. Combine sauce ingredients in a bowl.
Pour half of the tomato sauce into a 9x13" baking pan. For each cannelloni, spoon 1/3 cup of meat or tofu mixture at one end of the wrapper, roll wrapper around filling, and place the seam side down in pan. Pour remaining sauce over top, being sure to moisten ends of each wrapper.
Cover and bake in 350°F oven for 40 min. Uncover, sprinkle with cheese, and return to oven; bake until cheese melts (5-7 min).
