Jama's "Classic" Macaroni & Cheese

what you need
  • 8 oz. rotini pasta
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1 1/2 cups milk
  • 2 Tbsp. stick butter
  • 2 cups shredded cheddar cheese
make it
PREHEAT oven to 375°F. Grease a 2-qt casserole dish. Cook rotini according to package directions, but reduce cooking time by 2-3 minutes; Drain well; Cover and set aside.

Meanwhile, in a medium saucepan, combine cornstarch, salt, dry mustard and pepper. Over MEDIUM heat, add milk and butter, and whisk until smooth. Stir constantly, and bring sauce to boil; Boil for 1 minute and remove from heat. Reserving 1/4 cup of the cheese for topping, stir remaining cheese into sauce until completely melted. Add cooked pasta; lightly blend.

Turn mixture into prepared casserole dish; Sprinkle top with reserved cheese.

BAKE, uncovered, for 25 minutes, or until hot and bubbly.
