what you need
- 3/4 cup shortening
- 1/2 cup sugar
- 1 egg
- 1/2 tsp. vanilla
- 3 Tbsp. orange juice
- 3 cups flour
- 2 tsp. baking powder
- Pinch of salt
- Assorted fruit jams, jellies or preserves
make it
Cream together shortening and sugar until light and fluffy. Add egg, vanilla and orange juice and mix until smooth. Sift flour with baking powder. Gradually add the flour mixture to the wet mixture until a soft dough forms.
Wrap dough in plastic wrap and refrigerate overnight.
Preheat oven to 350 degrees F. Roll out dough on a floured board to about 1/4" thick. Cut into 3 inch circles with cookie cutter. Place 1/4 teaspoon jam, jelly or preserves into the center of each circle. Fold up sides to form a triangle (little tricone hat) shape.
Bake 15 minutes or until golden brown. Cool completely on wire rack.
