Oatmeal Out Of the Bowl Blueberry Pancakes

what you need
  • 3/4 cup oats
  • 1 cup water
  • 1/2 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 egg, slightly beaten
  • 3/4 cup milk
  • 1 cup blueberries
make it
Combine the oats and water and microwave for 3 minuets, or until cooked.

Combine all other dry ingredients and wet ingredients separately. Pour the wet ingredients into the dry ingredients, mix well. Add the cooked oatmeal and mix well.

Spoon batter by 1/3 cupfuls on hot greased skillet, once batter is poured sprinkle blueberries on top. Cook about 3-5 minutes, or until pancake holds together while trying to flip. Cook another 3 minutes or until done.
These are very moist and dense pancakes, if you can even consider them pancakes, they are more like an thick oatmeal clumped together, and formed into patties. If you don't like oatmeal, this may not be for you. They sure are filling!

Rated  by pixie1001 on 7/18/2009 This recipe is great with a few tweaks, try adding sugar to the oatmeal while its cooking or using a flavored oatmeal, like cinnamon and brown sugar. also, i doubled the cinnamon and blueberries to add more flavor. its also reeeeealy good topped with honey and syrup.
