what you need
- 1 pkg. (18 1/4 oz.) yellow cake mix
- 1 can (15 oz.) packed pumpkin
- 3 eggs
- 1/3 cup sugar
- 1/3 cup oil
- 1 Tbsp. pumpkin pie spice
- 1 can (16 oz.) vanilla frosting
- 1 pkg. (3 oz.) cream cheese
make it
Preheat oven to 350 degrees F. Combine the cake mix, pumpkin, eggs, sugar, oil and pumpkin pie spice; beat on low for 30 seconds. Beat on medium for 2 minutes.
Pour into greased 15 x 10" pan. Bake for 25-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
Beat frosting and cream cheese until smooth; spread over cake. Store in the refrigerator.
Notes
Tip: If you rarely use pumpkin pie spice in your cooking, you may want to make your own instead of buying it. Combine 4 tsp. cinnamon, 2 tsp. ginger, 1 tsp. cloves and 1/2 tsp. nutmeg. Store in an airtight container. Yield: 7 1/2 tsp.
