Cranberry Pumpkin Bread

what you need
  • 3 3/4 cups flour
  • 3 cups sugar
  • 4 tsp. pumpkin pie spice
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 4 eggs
  • 1 can (15 oz.) packed pumpkin
  • 1/2 cup oil
  • 2 cup fresh or frozen cranberries, thawed
  • 1 cup chopped walnuts
make it
Preheat oven to 350 degrees F. In large bowl, combine the flour, sugar, pumpkin pie spice, baking soda and salt. In another bowl, beat the eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in cranberries and walnuts.

Spoon into two greased loaf pans.

Bake for 70-80 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire rack to cool completely.
Notes
Tip: For an extra-special treat, serve this bread with this easy Honey Cinnamon Butter. Simply blend 1 cup softened butter with 1/2 cup honey and 1 tsp. cinnamon.
