One-Pot White Chili

what you need
  • 1 Tbsp. canola or olive oil
  • 2 onions, chopped (about 2 cups)
  • 3 cloves garlic, minced
  • 2 carrots, chopped (about 1 cup)
  • 3 cans (15.5 oz. each) great northern beans, drained and rinsed well
  • 3 cups canned low-sodium vegetable broth
  • 2 tsp. cumin
  • 1/2 tsp. ground cloves
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 2 cups shredded Monterey Jack
make it
WARM oil over medium heat in a large saucepan. Add onions, garlic and carrots and sauté until onions are softened and translucent, about 5 minutes.

STIR in beans, broth, cumin, cloves, oregano and salt. Bring to a boil, cover, reduce heat to low and simmer until warmed through and flavors have developed, about 1 hour.

REMOVE from heat, divide into bowls, top with cheese and serve.
