Saffron Sauce

what you need
  • 2 Tbsp. extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 small shallot, diced
  • 1 can (6 oz.) hollandaise sauce
  • 3/4 cup dry white wine (such as pinot grigio)
  • 1 pinch saffron
make it
Place olive oil in a sauce pan on medium high heat. Add garlic and shallot and cook until translucent (about 2 minutes). Add hollandaise and reduce heat to simmer for 3 minutes.

Add wine and whisk continuously for 3 minutes.

Stir in saffron and simmer for 3 more minutes. Serve hot.
Perfect on butter seared scallops or eggs Benedict.

Only use a wine you are willing to drink and do not add before hollandaise due to heat and alcohol combination.
