what you need
- 1-2 lb. pork loin roast
- 1/2 cup olive oil
- 2 Tbsp. red wine vinegar
- 1 Tbsp. parsley
- 1 Tbsp. garlic, minced
- 1 Tbsp. herbs de provence
- 1 tsp. salt
- 1 tsp. pepper

Preheat oven to 350 degrees F. Place pork roast in a 13" x 9" pan.
Combine the rest of the ingredients in a jar with tight fitting lid and shake well. Pour over roast.
Bake for 45 min, turn roast over and bake for 45 more minutes. Let stand for 5 minutes before slicing.
Notes
We serve this with a green salad and roasted potatoes.
