Asparagus Creamy Soup

what you need
  • 1 small onion, diced
  • 2 tsp. butter
  • 1 lb. trimmed asparagus, cut into pieces
  • 1 qt. reduced-sodium chicken broth
  • 1/2 cup fat-free half-and-half
make it
Saute onion and butter in a saucepan until softened. Add trimmed and cut-up asparagus, cook 4 minutes.

Add chicken broth; bring to a boil. Cook until asparagus is tender, about 10 minutes. Cool slightly.

Puree in blender. Stir in half-and-half.

Rated  by jodanchrist on 4/27/2011 I am not a cook by any means and don't like lots of spices but I tried this recipe and it was absolutely delicious! I will make this again. It was very easy to follow the recipe and it turned out just like it looked in the picture! Both my husband and son enjoyed it, too.
