what you need
- 1 small onion, diced
- 2 tsp. butter
- 1 lb. trimmed asparagus, cut into pieces
- 1 qt. reduced-sodium chicken broth
- 1/2 cup fat-free half-and-half
make it
Saute onion and butter in a saucepan until softened. Add trimmed and cut-up asparagus, cook 4 minutes.
Add chicken broth; bring to a boil. Cook until asparagus is tender, about 10 minutes. Cool slightly.
Puree in blender. Stir in half-and-half.
