Cinnamon Apple Pork Tenderloin

what you need
- 1 to 1.5 lb. pork tenderloins
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 2 tablespoons packed brown sugar
- 2 apples, peeled, cored and sliced
- 2 tablespoons craisins

Preheat oven to 400 degrees F. Place pork tenderloin in a roasting pan or casserole dish.
Combine the remaining ingredients in a bowl and stir. Spoon the apple mixture AROUND pork tenderloin.
Cover and bake for 30 minutes. Remove lid and spoon apple mixture OVER the tenderloin. Return to the oven and bake for 15 to 20 minutes longer, or until the tenderloin is browned and cooked through. (A meat thermometer in the center should register at least 150 to 160 degrees F.)
Notes
A suggestion is to double the apple mixture.
