what you need
  • 1 lb. hamburger
  • 1 onion, chopped
  • 1 Tbsp. garlic, minced
  • 2 cans (10 oz. each) enchilada sauce
  • 12 corn tortillas (all but 4 cut in half)
  • 4 cups Kraft shredded cheddar cheese
  • Breakstone's Sour Cream

Preheat oven to 350 degrees F. In a 10" frying pan, cook hamburger, onions, and garlic on medium heat 10 minutes or till hamburger is no longer pink. Drain off grease.

Spray a 9" x 9" baking pan with butter flavor spray. Pour 1/2 of a can of the enchilada sauce in the bottom of the pan. Place cut side of tortilla on each side of pan and a uncut tortilla in the center. Top with 1/3 of the hamburger mixture and then 1 cup of the cheese. Repeat layering. The top layer will be just the sauce and cheese.

Bake for 30 minutes or till heated through and cheese is melted and slightly brown. Let rest 10 minutes before slicing.
Notes
I serve this on top of a nice bed of mixed greens with sour cream on the side.
