what you need
  • Salad Ingredients
  • 9 ounces orzo pasta, (1 1/3 cups) cooked and rinsed with cold water
  • 1 can (14.5 ounce) whole kernel corn, drained
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1 cup shredded Mexican blend cheese
  • 1 cup chopped green bell pepper
  • 2 green onions, sliced thin
  • 2 cans (14.5 ounce each) Red Gold® Petite Diced Tomatoes Mexican Fiesta, drained or 2 cans (14.5 ounce each) Red Gold® Petite Diced Tomatoes with Green Chilies, drained
  • Dressing Ingredients
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 1/4 cup low fat sour cream
  • Salt and black pepper to taste
make it
In a large mixing bowl combine all the salad ingredients.

In a small bowl combine all the dressing ingredients; blend well.

Add dressing to salad and toss gently to coat.
