Rice with Pigeon Peas (Arroz con Gandules)

what you need
  • 1 Tbsp. olive oil
  • 2 slices salt pork, diced
  • 4 Tbsp. Sofrito
  • 1 packet sazon
  • 1 chicken bouillon
  • 1 can (8 oz.) tomato sauce
  • 1 can (15 oz.) gandules (pigeon peas)
  • 2 cups long grain white rice, rinsed
  • 2- 2 1/2 cups water

Pour olive oil in heavy Dutch oven (do not use non stick pan). Add diced salt pork and saute till golden brown and crispy. Add sofrito and saute 1 minute.

Add sazon then add chicken bouillon and tomato sauce. Simmer 1-2 minutes then add gandules (liquid and all) and 2 or 2 1/2 cups water. Let simmer about 5 minutes.

Add rice and bring to boil. Cover with lid, reduce heat, and simmer for 20 to 25 minutes till rice is tender and liquid absorbed.
Humid weather does affect outcome of rice. If high humidity use 2 cups water.

Can also add diced ham or pork, pimento or green olives to rice. Saute cubed ham or pork with salt pork. Add olives or pimentos with tomato sauce.
