German Potato Salad

what you need
  • 4 cups cooked, peeled and sliced potatoes
  • 4 slices bacon
  • 1/2 cup chopped onion
  • 2 Tbsp. flour
  • 1/4 cup sugar
  • 1/2 tsp. salt
  • Dash pepper
  • 1 cup water
  • 1/3 cup white vinegar
  • Fresh parsley for garnish
make it
Cook potatoes, set aside. Fry bacon until crisp, set aside.

Saute onions in bacon grease till tender. Stir in flour, sugar, salt and pepper. Gradually add water and vinegar. Stir and cook until bubbly and thickened. Add potatoes and heat.

Place in serving dish. Crumble bacon and sprinkle on top. Garnish with fresh parsley if desired.
