what you need
- 1/2 cup lemon juice
- 1/2 cup sugar
- 2 tsp. finely chopped onion
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- 2/3 cup canola oil
- 1 Tbsp. poppy seeds
- 1 bunch romaine lettuce, torn
- 1 cup Kraft reduced-fat shredded Swiss cheese
- 1 cup unsalted cashews
- 1 medium apple, chopped
- 1 pear, chopped
- 1/4 cup dried cranberries

In a blender, combine lemon juice, sugar, onion, mustard and salt. While processing, gradually add oil. Stir in poppy seeds. Transfer to small bowl. Refrigerate 1 hr.
In large salad bowl, combine the romaine, cheese, cashews, apple, pear and cranberries.
Drizzle with dressing, toss to coat.
Notes
This is a wonderful autumn salad that goes well with pork or chicken, or eaten as a light lunch.
