Sherry's Leftover Turkey Casserole

what you need
- 1/2 lb. sliced fresh mushrooms
- 1/2 cup chopped celery
- 5 Tbsp. butter, divided
- 2 Tbsp. cornstarch
- 2 cups 2% milk
- 2 cups cubed, cooked turkey
- 2 cups cooked 'no-yolk' egg noodles
- 1/2 cup fat-free chicken broth
- 1 tsp. salt
- 1/2 tsp. dried thyme
- 1/8 tsp. white pepper
- 1/2 cup dry bread crumbs

Preheat oven to 375°F. Spray a 2-quart baking dish with cooking spray. In lg skillet, saute mushrooms and celery with 3 Tbsp. butter until tender. Combine cornstarch & milk until smooth, stir into mushroom mixture. Bring to boil over medium heat, stirring constantly. Cook until thickened, about 1-2 min. Stir in turkey, noodles, broth, salt, thyme, and pepper. Pour into prepared baking dish.
Melt remaining butter, toss with bread crumbs. Sprinkle crumbs over casserole.
Bake, uncovered for 20 min or until heated through.
